Easy 3-Ingredient Banana Pancake Recipe

I had a bunch of over-ripe bananas in my kitchen this past weekend (why does this happen all the time? It takes these bananas a total of 5 seconds to go from green to over-ripe, seriously), so I thought I'd cook up my favorite banana pancakes! My mom asked me for the recipe, and she didn't believe that it only takes 3 ingredients, but it really does.

This is the perfect recipe for busy moms because it's quick and easy to make, and also makes sure that over-ripe bananas don't just go to waste, so I thought I'd share it with y'all too. Enjoy!


Easy 3-Ingredient Banana Recipe (makes 6 small pancakes)
Ingredients:
2 medium-sized ripe bananas (the more ripe, the better)
2 medium-sized eggs
3/4 cup multi-purpose flour

Tools:
Large bowl
A fork
A good, non-stick pan like my TEFAL Sensorielle pan



First, mash the bananas. This is super easy to do with just a fork, especially with a really soft over-ripe banana.




 Then, mix in the eggs and flour. Stir everything together till you get a somewhat runny consistency.


Now it's time to cook them pancakes! 

Melt butter in the pan on low heat. Scoop the pancake mix into the pan - mine is large enough to fit three small-ish pancakes. You'll have to see how many pancakes yours can fit.

Cook the pancakes about a minute on each side on medium-low heat (this is for small pancakes like the ones I make, which are about five inches across - if yours are bigger, allow for more cooking time). Once the pancakes are this nice, golden-brown color, you know the pancakes are cooked!


I like eating my banana pancakes plain, but when I'm in the mood to indulge, I love pouring on some honey or condensed milk (don't judge meeee!).
